Because it is the last price after all the money and information in the market have acted on it. Across large samples, closing prices at sharp books are very well calibrated — when they imply 60%, the outcome happens close to 60% of the time. Our calibration lab measures this on our own data.
Early prices contain more errors, which is where value appears — and disappears as the market corrects. Betting close to kick-off gives you the most accurate price but rarely a better one than the close. The measurable question is whether your early price beats the close; that is closing line value.
